Ingredients

  • 1 block (200g / 7 oz) feta cheese
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • Salt and black pepper, to taste
  • 250g (9 oz) short pasta (penne, fusilli, or rigatoni)
  • Optional: chili flakes, fresh basil, lemon zest

Instructions

1. Preheat & Prepare

  1. Preheat your oven to 400°F (200°C).
  2. Place cherry tomatoes in a baking dish. Add olive oil, garlic, salt, and pepper. Mix well.
  3. Make space in the center and place the block of feta cheese.
  4. Drizzle a bit of olive oil over the feta and season lightly with pepper or chili flakes.

2. Bake

  1. Bake uncovered for 30 minutes, until the tomatoes have burst and the feta is soft and golden.

3. Cook the Pasta

  1. While baking, boil your pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
