Introduction

Chicken Fajitas are a Mexican classic that bring sizzling excitement to any table. They combine marinated chicken strips with colorful bell peppers and onions, all quickly sautéed to perfection. Served with warm tortillas and your favorite toppings, this dish is perfect for weeknight dinners or casual gatherings.

Ingredients

For the Chicken Marinade:

  • 500g (1.1 lb) boneless, skinless chicken breasts or thighs, sliced into strips
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste

For the Vegetables:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced

For Serving:

  • Flour or corn tortillas, warmed
  • Sour cream
  • Guacamole
  • Salsa or pico de gallo
  • Shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro and lime wedges

Instructions

1. Marinate the Chicken

  1. In a large bowl or resealable bag, mix together olive oil, lime juice, garlic, and spices.
  2. Add chicken strips and toss to coat. Marinate for at least 30 minutes (or overnight for best flavor).

2. Cook the Chicken and Vegetables

  1. Heat a large skillet or cast iron pan over medium-high heat.
  2. Cook the chicken strips for about 5–7 minutes until fully cooked and slightly charred. Remove and set aside.
  3. In the same pan, add a bit more oil if needed. Sauté the bell peppers and onions for about 5–6 minutes until tender-crisp.
  4. Return the chicken to the pan and toss everything together for another 1–2 minutes to combine.

3. Serve

  1. Serve the chicken and vegetables hot, directly from the skillet if you like.
  2. Place some filling into each tortilla and top with your choice of sour cream, salsa, guacamole, cheese, and cilantro.
  3. Squeeze fresh lime juice on top for a citrusy kick.

  • Spicy version: Add sliced jalapeños or a pinch of cayenne pepper to the marinade.
  • Grilled version: Grill the chicken and vegetables instead of sautéing for a smoky taste.
