Introduction
Chicken Fajitas are a Mexican classic that bring sizzling excitement to any table. They combine marinated chicken strips with colorful bell peppers and onions, all quickly sautéed to perfection. Ingredients
For the Chicken Marinade:
- 500g (1.1 lb) boneless, skinless chicken breasts or thighs, sliced into strips

- 1 teaspoon chili powder
- 1 teaspoon smoked paprika

- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced

- Flour or corn tortillas, warmed

Instructions
1. Marinate the Chicken
- In a large bowl or resealable bag, mix together olive oil, lime juice, garlic, and spices.
- Add chicken strips and toss to coat. Marinate for at least 30 minutes (or overnight for best flavor).
2. Cook the Chicken and Vegetables
- Heat a large skillet or cast iron pan over medium-high heat.
- Cook the chicken strips for about 5–7 minutes until fully cooked and slightly charred. Remove and set aside.
- In the same pan, add a bit more oil if needed. Sauté the bell peppers and onions for about 5–6 minutes until tender-crisp.
- Return the chicken to the pan and toss everything together for another 1–2 minutes to combine.
3. Serve
- Serve the chicken and vegetables hot, directly from the skillet if you like.
- Place some filling into each tortilla and top with your choice of sour cream, salsa, guacamole, cheese, and cilantro.
- Squeeze fresh lime juice on top for a citrusy kick.
